The tongue is the area in the mouth concerned with the sole sense of taste it distinguishes various taste sensations through the aid of taste receptors which are found basically at the tips and edges of the tongue.
These taste receptors usually have a short-lived life, they degenerate and die and are replaced by new ones in the tongue through cell division.
However, the tongue is mainly concerned with taste detection...it is highly adapted for this event.
There are four types of basic taste sensation. These tastes modalities arise from their combination of other sensation receptors which are touch, temperature, pain receptors in the oral and lingual mucosa.
Types of tastes are basically;
- Sweet
- Sour
- Bitter
- Salty
The tip of the tongue is sensitive to taste. The standard for sweetness is SUCROSE. All sugars are sweet.
SACCHARIN is 67 times sweeter than sucrose but exihibits a bitter after taste.
The sweetest substance known to humans are the proteins.
α amino acids are the sweet aspect of proteins.
miraculin changes the taste of acid from sour to sweet
The back of the tongues are sensitive to bitter taste.
Quinine is the yardstick for bitterness. Alkaloids are bitter basically morphine, some non-alkaloids too basically calcium, urea.
This is found at the backend of the tongue that enters into the esophagus. Sour taste is seen in all acids. Some organic acids give mixed sensations, for instance, citric acid, is both sweet and sour, picric acid is bitter and sour, and acetic acid gives the taste of vinegar, which is a mixed sensation.
The frontal edges of the tongue are sensitive to salty tastes. Sodium Chloride or common salt is the standard taste for salty taste
Aguesia :
