Pickles

When I hear the name of the pickles, I can't handle the greed; water comes to my tongue. Pickle raw mango with or without peel. Make olive pickle, boil it again, and pickle tamarind or plum in another way. Different fruit pickles have different tastes. When it rains, I cook khichuri, and I will have pickles with the khichuri roast. Add potato filling and pickling oil, and the interest in eating increases significantly. With white rice, dal, and shaak bhaji, I will have a little pickle on my plate.

At home, I saw my mother and grandmother collecting sour fruits, making pickles and filling the jars. Pickles are made with great care, especially with raw mangoes. Many pickles are made with raw mangoes: Sweet Pickle, Sour Pickle, Mango Pickle with Peel, and Mango Morabba.
There are many stories of children stealing pickles from their mothers. Pickle lovers like me probably have stories of stealing pickles.

At the time of barai, raw plums were dried in the sun and mixed with mustard oil and pickled spices; dried plums were shown to the sun. I used to see my mother keep the pickle in a glass jar to stay good for a long time.

Earlier, we used to eat pickles from my mother and grandmother; now, we make many kinds of pickles ourselves. Whenever I get any sour fruits, I make pickles with them. Before adding mustard oil, dry chillies, salt, garlic and the main spice of the pickle is fried and powdered. When pickles are made, the house is filled with the smell of pickled spices.
I add vinegar to the pickle because it stays good for a long time so that it does not catch fungus, and sometimes I take it out and show it in the sun. I keep my pickles for a year. After a year, when new raw fruits are available, pickles are made again.

Tamarind is very sour, so add a little sugar or molasses to reduce the slightly sour taste while making tamarind pickle.
I don't like lemons anyway, but I like pickled lemons so much that I'm eating nectar. I never get bored eating pickles.
