With the blessings of technology, it's become much easier to preserve any kind of food in the 21st century. Even 10 years back at my house when we didn't have a refrigerator, we used to preserved meat after "Eid-ul-Azha" "Kurbani" by drying them in the sunlight. The meat lasts at least 30-35 days. But now for the refrigerator preserving meat by freezing is the easiest way.
The early motive of food preservation was to consume food for later. Or protecting themselves from disasters. In the medieval periods, there were limited ways to preserve meat. People used to preserve meat in the mountain ice if there were any mountains nearby. Again if there were no mountains then how did they preserve them? Well, there was the most common method like salting and drying meat. Even I have seen the drying method. The meats were cut into very small pieces and keep then drying every day.
Again the salting method is pretty similar to the drying method. Instead of directly drying the meat in the sunlight salts were added to the meat on both sides and keep them drying. The salt helps to absorb all the water inside the meat and keep them completely dry. Salt also prevents growing bacteria which is responsible for food rots.
