  1. Keto Cauliflower Fried Rice:
    Ingredients: 1 head cauliflower, chopped into small pieces, 2 tablespoons coconut oil, 2 garlic cloves, minced, 1/2 onion, chopped, 1/2 cup frozen peas and carrots, 2 eggs, beaten, 1 tablespoon soy sauce, salt and pepper to taste.

Instructions:

  • Heat the coconut oil in a large skillet over medium-high heat.
  • Add the garlic and onion and sauté until fragrant.
  • Add the cauliflower rice and frozen peas and carrots and cook for about 5-7 minutes, until the cauliflower is tender.
  • Push the cauliflower to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through.
  • Mix the eggs and cauliflower together and add the soy sauce, salt and pepper to taste.
  1. Keto Chicken Stir-fry:
    Ingredients: 1 pound boneless, skinless chicken breasts, sliced into thin strips, 2 tablespoons coconut oil, 1 onion, sliced, 2 bell peppers, sliced, 1 zucchini, sliced, 2 garlic cloves, minced, 1 teaspoon grated ginger, 1/4 cup soy sauce, salt and pepper to taste.

Instructions:

  • Heat the coconut oil in a large skillet over medium-high heat.
  • Add the chicken and sauté until cooked through.
  • Remove the chicken from the skillet and set aside.
  • Add the onion, bell peppers, zucchini, garlic and ginger to the skillet and sauté until tender.
  • Add the chicken back to the skillet and pour in the soy sauce. Mix everything together and cook for another 2-3 minutes.
  • Season with salt and pepper to taste.

    Ingredients: 6 hard-boiled eggs, chopped, 1 avocado, mashed, 1/4 cup mayonnaise, 1 tablespoon Dijon mustard, 1 tablespoon lemon juice, salt and pepper to taste.

  • In a large bowl, mix together the chopped hard-boiled eggs, mashed avocado, mayonnaise, Dijon mustard and lemon juice.
