Hello members of the Steemit family. It is an amazing say today and as of last month we are in the week 3 of season 2 of the steemit engagement challenge. I will love to join the entire steemit team in participating in this contest.
In this post I will be discussing the various steps involve one of the dishes that is eaten in my country Cameroon. One thing I love my country is that we do have very interesting dishes in my country. Today I will talk about a food I love so much, Water Fufu and Eru. I hope you can the learn steps I will be sharing with you and also prepare your own water fufu. This dish is a traditional dish of the south west people in Cameroon but it is being eaten all over the national territory. You see there are very few dishes that meet up to this criteria.
I don't think I know of any history related to this food unless for the fact that it is gotten from eru leafs growing in the forest in South West region of Cameroon. That is why it is a delicacy there. It's where my mother learned how to cook it and then me from her.
I honestly do not think I can stay for long without water Fufu and eru. I usually eat it on a daily bases. It is that special to us that you go to every occasion and you will find eru. It is harram to have an occasion and not prepare Eru. So I don't think I can go without it.
I will like to start with the preparation of water fufu. The water fufu is gotten from Cassava a common food crop that is grown in Cameroon. The process of making water fufu out of cassava is rather a long one and we will not be getting into it today.
HOW TO PREPARE WATER FUFU
- STEP ONE.
Buying about water fufu from the market. The first step is to buy water fufu from the market, that is the cassava that has already been processed. You can buy it in white nylon papers or in bags. We usually buy it in the market in bags and store in the house.
- STEP TWO.
Mixing of the fufu. The next step is what we locally call mixing. In this process, you pour the desire quantity you want to cook into a pot and then pour in water and mix. You are to mix so well so that it is fine. After mixing it looks something like this.
- STEP THREE.
Turning the water fufu. After you have mixed very well, you can then put the pot on the fireside and start turning the water fufu using a turning stick. I don’t know the name in English as this is a traditional meal and not a national food. While turning, you also have to momentary add water into the pot depending on the nature of the water. This is to make the water fufu a little soft and not strong. This process can take 30 minutes to 1 hour depending on the quantity you are preparing.
HOW TO PREPARE ERU?
The next we have to prepare is the Eru as I earlier said, Eru and water fufu is being eaten together. So follow the next step to prepare Eru.
MATERIALS TO USE.
Preparing the Eru is a little more complicated than the Water fufu so we need more ingredients.
- Water leaf
- Eru
- Red oil
- Maggi
- SaltMeats
- Crayfish
- STEP ONE.
Buying the needed ingredients from the market. As we know the first step will be buying the above materials in the market and it will all depend on the quantity we want to buy.
- STEP TWO.
Slicing water fufu. After buying the various items, the next step is to slice the water leaf. We were also supposed to slice the Eru but we usually buy it already sliced, so we will concentrate on slicing the water leaf.
- STEP THREE.
This step involves preparing the water leaf. This is the cooking step proper. We are to put the water leaf in a pot and put it on the fire. Remember we call it water leaf so no water is needed, it produces water of its own. We are to cook it until it has a brown color. But this step is not very necessary if you want a green Eru.
- STEP FOUR.
After getting the brown color, we then add the raw Eru into the pot and steer until you can predict it is properly mixed. We then let it cook for about 30 minutes while steering occasional. For people who want a green eru, the can usually just put in the water leaf and Eru at once into the pot.
- STEP FIVE.
After letting it cook for about 30 minutes you can then add the desire quantity of Red or Palm oil you will love to add. You can let it cook for 15-30 minutes while steering.
- STEP SIX.
This step is basically about adding your seasonings. The maggi, salt, crayfish and so on. This is to be added into the cooking pot as you desire, there is no universal rule to follow. But for me I usually put the salt, then maggi and crayfish with our already cooked meat or canda. After adding the necessary ingredients, you can let it cook for 10-30 minutes and the you remove it. You water fufu and Eru is ready for consumption. I do hope you did follow and learn how to prepare this delicacy.
If you have never eaten it before, I strongly recommend that you try it especially if you come to Cameroon. It is sold in almost all the restaurant.
It is also very rich in nutrients. However, because of the water Fufu which is starch and Eru which we use red oil to prepare it makes it takes long to digest. So it's good mostly for lunch. Eat it 4 hours before sleeping.
As I did say earlier, water fufu and Eru is a very good dish in my country. It was one of the first meal I learned how to cook from my mother. We used to have a restaurant that we will cook it daily and so by default setting, I was supposed to learn. It’s been a while I cooked it and thanks to this contest I had the opportunity to do that this day. I hope I didn’t bore you with my long process.
I invite my friends big cook @chiabertrand, @dholy1 and @amyjay to take part in this contest.
I really enjoyed your recipe today. You have presented each step of making the recipe very nicely and you have given us the description. The presentation of your post was very good. All in all you have made a good entry.

What's enticing me with this your post is the way the oil in the eru is shining. It shows all the water has dried and that's how eru should be.

Hi, @ebuahsang1!
Thanks for sharing the recipe of water fufu. I just loved it. It's such a good alternative for people who can't eat wheat.
I guess the turning stick is just a turning stick. I'm sure you have a specific name for it in your language. As I see it, it looks like a giant pestle. In my country, Venezuela, we get to eat cassava in the form of flat cakes that are crunchy. On the other hand, our "bola de plátano", mashed unripe plantain rolled into balls, is made by pressing the boiled plantain in a big mortar with a pestle (we call it "pilón" in Spanish). Getting to know about water fufu has been a great discovery for me. Thank you so much for sharing.
Good luck in the Challenge :)

Wow, I have had yam Fufu and cassava Fufu mixed with plantain but I have never had water Fufu. I didn’t even imagine that this was a thing .
At first when I saw plenty water i didn’t think it will come out well but am glad I was proven wrong. This is one other type of Fufu I think I will find time and try.
Thanks for sharing this wonderful delicacy with us.
