My Dairy || 14/01/2025 || "How I prepared Affang soup (Okasi soup)"

Hello Steemians, let me begin by introducing my self as a proudly "African son" who is fully in love with our local delicacies. Today, I will be sharing one of our local delicacies which happens to be the chief corner soup among all other soups in the Southern region of Nigeria, Akwa Ibom State to be precised.

This soup is unique to this part of the world due to our abundance Palm fruit which serves as the foundation of enjoyment coupled with the fact that we are blessed with numerous aquatic proteins (oysters, Periwinkles, Crap, fishes etc) and different terrestrial animals to use as terrestrial proteins. Nigeria is an African country located along the area called "West Africa" and it has three major ethnic groups (Igbo, Hausa and Yoruba).

Ingredients for the Soup

1.| Palm Oil (in abundance)

3.| Spices (Maggi, Pepper, Salt, Obu etc)
4.| Water leaf
5.| Meat (optional, yet advisable)
6.| Fish ( optional, but essential)
7.| Mfi (periwinkle)
8.| Obu (optional but essential)
9.| Stock fish ( Optional but essential)

Detailed Method of Preparation

After plucking and slicing your #Affang and Water leaf, pound the Affang then follow the steps below:

  • Step one: Carefully wash and parboil your meat, fish, animal skin, stock fish and every other fleshy ingredients you wish to add to your delicious Affang soup.
    N/B: It is an offense to add excess water as palm oil will be used effectively to compliment this.

  • Step two: After the first step is accomplished, pour your sliced water leaf into the pot of proteinous substance and add enough oil. Yes! add the oil out of abundance because we are rich with it.

  • Step three: Add all other essential ingredients such as; Salt, Maggi, Pepper, Cray fish and ensure it is adequate and not in excess.

  • Step four : Allow the contents in step three to boil for some minutes or until it's well cooked before adding your pounded/grinded Affang to the soup

  • Step five: The last stage of the process is where we ensure that the all the ingredients including palm oil is in effect concentration. If it is, remove the soup from the fire.

  • Step Six This happens to be the stage of consumption. Affang soup is better served with either Eba or fufu ( both cassava flour).

Some Additional Information

  • The soup is better used for occasion such as marriage ceremony, burial ceremony as well as home used.

  • The soup could be prepared in a different version based on different parts of Nigeria. However, this version is peculiar to the Akwa Ibomites
