How To prepare Ekpang Nkukwo - Africa delicacy

Everyone has their own local food and their recipe, through my participation in this contest organised by @goodybest I will be showing you how to prepare our local food called Ekpang Nkukwo, it is one of my favourite food,it tastes so nice and has a lot of health benefits.

Ekpang Nkukwo is prepared using Cocoyam and wateryam with potatoes or Cocoyam leaf to wrap it. The nutritional value that it has is too much that one cannot miss it. I didn't like it at first but when I look up to it benefits I started eating this a lot. It is our local food and thus it is also prepared when we have an occasion like marriage or a party.

Ingredients


  • Water yam
  • Cocoyam
  • Meat
  • Dry fish
  • Palm oil
  • Perewinkle
  • Cowskin
  • Leaf
  • Seasoning cubes
  • Salt to taste

Cooking process

Step 1


Peel the water yam and cocoyam, wash them thoroughly to avoid sand, blend the two together or you use grater to grate them, it is a little challenging but the meal worth the time and energy 😉

Step 2


Once done, mix the paste thoroughly together with your clean hands to make sure it is mixed, then add your seasoning to taste, example add salt and seasoning cubes and mix again for a nice mixture. As seen below

Step 3


Wash your pot and the leaf you will be using to wrap it, here I used only potato leaf

Step 4


Wash and steam your meat, wash other ingredients for example wash your fish, cut onion, grind pepper, crayfish.

Step 5


Wrap the paste big by bit using the leaf, there is much work here but you need to be patience so as to achieve the desired shape. As you are placing the wraps into the pot, be adding your oil, periwinkle and the cowskin. So it will be evenly distributed in the pot.

Step 6


Once done, add your salt, seasoning cubes, fish, crayfish, pepper, onion, oil and then boil water and then pour it into the ekpang pot, cover it and put it on fire, do not stir to avoid it getting burnt.

Allow the ekpang to cook for 15 minutes stirring it, add water if it's too dry, allow it for more 15 minutes, add palm oil, and sliced curry leaf or scent leaf, stir and bring the pot down and enjoy your delicious Ekpang Nkukwo.

Finally my Ekpang Nkukwo is done ✅ taste so delicious, try yours and enjoy this delicacy.

Ekpang Nkukwo is my favourite because of its nutritional value, Cocoyam which is the main ingredients is rich in protein, fiber, minerals and vitamins making it a good meal for everyone, it has antioxidants.

Cocoyam helps boost the production of breast milk in breastfeeding mothers, I eat it a lot because of this value so my baby will have enough breastmilk. When consume by mother's, the fiber content in cocoyam helps baby's digestive system and avoid constipation in exclusive breastfeeding babies.

Cocoyam has antioxidants which helps to prevent the body against chronic diseases.

With this reasons, I like Ekpang so much 🤩🤩😝😝

This is so rich and it's looking yummy.
Ekpang is on the last page of my best meals but I get attracted to it when it is prepared with good ingredients ( fish, periwinkle and meat) like these. The nutritional value attracts me as well but it is sad that I discovered late.

Almost everyone loves this meal in Akwa Ibom and other part of Nigeria but my own case is different. I guess it's because I never liked the food from childhood.😁

Thanks for sharing the nutritive value of cocoyam, I use to like it though but I never thought it's rich in nutrition especially for breastfeeding mother's and babies!
