Cooking is an art that requires patience, practice, and dedication. As someone that likes cooking, I take pride in my ability to prepare delicious meals, and one of my specialties is cooking rice and stew.

In this article, I'll walk you through my cooking process and share some tips and tricks I've learned along the way.

⚪️ Goat meat
⚪️ Onga Maggi
⚪️ Salt
⚪️ Vegetable oil
⚪️ Fresh pepper
⚪️ Onions
⚪️ Tin and Fresh tomatoes
⚪️ Mixed spices

COOKING RICE

I started by measuring 5 cups of rice into a bowl and rinse in a fine mesh sieve until the water runs clear. This removed excess starch, resulting in separate grains. I then heat a medium saucepan over medium heat and added a tablespoon of vegetable oil to prevent the rice from sticking.

After which I added the rinsed rice and measured water to the pot. I brought the water to a boil, then reduced the heat to low, covered the pot with a tight-fitting lid, and simmered until the water was absorbed and the rice was cooked. Once it was cooked, I fluffed the rice with a fork to separate the grains.

COOKING STEW

My stew recipe was a classic Nigerian-style stew made with a rich tomato-based sauce, tendered goat meat, and aromatic spices. I carefully washed the ingredients and chopped the onions, fresh peppers, and fresh tomatoes, and grind the spices.

After that, I heat a pot over medium heat and add the vegetable oil to sauté the onions until translucent before I added the already steamed meat and cooked until browned, breaking it up into smaller pieces as it cooked.

I add the spices and tomatoes, grinded spices, chopped tomatoes, and tomato paste, stirring well to combine. After 3 minutes, I add water to the pot and brought the mixture to a boil, then reduce the heat to low and simmered until the meat was tendered and the sauce thickened.

I finally seasoned the stew with salt and other desired spices, then served it over the cooked rice and enjoyed it with my family.
