HOW TO COMBINE FRESH TOMATOES, EGUSI VEGETABLE TO MAKE A DELICIOUS SOUP.

INTRODUCTION

Eating is an inevitable act by any human. Except on days when one is fasting, no one can comfortably do without food. This means that food is important to every human.

People who grow healthily do not only eat balanced diets but also well prepared foods. In Nigeria, among the many soups in different regions is the egusi and vegetable soup. Most persons know only a certain way to prepare it. Today, I want to teach you through this post on how to prepare egusi and vegetable soup using fresh tomatoes.

This post is exclusively for people who cook well as I am only going to list the ingredients and procedures. I am sure some good cooks will try it out after going through this post.


INGREDIENTS

The ingredients used by each individual in this kind of soup varies from one person to another but among the ones that are listed below, the major ones top the list.

  • Egusi (Melon)
  • Vegetables
  • Fresh Tomatoes
  • Palm Oil
  • Onion
  • Maggi
  • Salt
  • Fresh pepper
  • Dry Fish
  • Meat
  • Crayfish (optional)
  • Pomo (optional)

Some of these ingredients needs to be prepared to be used for cooking. For instance, the fresh tomatoes and pepper needs to be grinded with onions to their texture when grinded for stew. The melon needs to be put in a small plate and a little of boiled water added. Meats needs to be parboiled to soften. Then the dry fish also has to be washed and prepared appropriately. Lastly, the vegetable should be sliced to pieces and washed to remove sand particles clinging to them.

After all these are done, the cooking can begin.


COOKING PROCEDURE

  • Step 1: Put the pot on the gas burner and turn it on.
  • Step 2: Allow it to dry, then add palm oil.
  • Step 3: * Allow it to heat up and add salt.*
  • Step 4: Add the melon (egusi) and allow it to fry for 30 seconds.
  • Step 5: Add the grinded fresh tomatoes and pepper. Allow to boil for 10 minutes.
  • Step 6: Add the dry fish, and Pomo and allow to boil for 3 minutes
  • Step 7: Add the meat and crayfish and allow to boil for 5 minutes
  • Step 8: Taste to see if all the ingredients are in their correct proportions.
  • Step 9: Add Maggi and leave it to boil for a minute.
  • Step 10: Finally, add the vegetables, steer everything together, and cover the pot. Allow to steam for a minute.

You can put of the gas burner to bring down the soup. This can be eaten with Fufu (Plantain flour) Semo, Eba, Iyan (Yam flour) , or Cassava flour depending on individuals' preferences.


CONCLUSION

That was exactly the way I prepared that delicious and sumptuous egusi combined with tomatoes and vegetables soup you see above. I used bitter leaves also, to make the soup taste bitter and sweet at the same time.Though I didn't put crayfish and pomo, it came out just the way I wanted.

I cook well and I can boast of my cookings anywhere. For the fact that I do not like to eat outside, I cook 95% of the food I consume. It is to my advantage because i spend less on food compared to people who buy or eat food outside. Also I eat well because I don't have to manage money going to purchase cooked food.

One secret to good health is eating balanced and healthy foods. Foods are healthy mainly when they are prepared by you.
