Bad Texture, Good Taste: Vegan Baked Chocolate Cakes

The process of making cakes is more difficult than cooking daily foods such as side dishes or snacks. In cakes, a lot of things related to techniques or quantities of food ingredients that will cause a failure in the results of the cake.

The most common thing is the failure to produce a good texture on the cake. Just like what I experienced this time. My cake has a bad texture. My chocolate cake is thick and not sweet enough.

From the start, I realized that this would fail

I did an eggless cake experiment. The crazy thing again, I'm running out of ingredients that quite affect the taste and texture of the cake. But I am determined to try to make a chocolate cake.

I ran out of sugar and finally replaced it with brown sugar that was makeshift. And when the cake was in the process of baking, I realized that if the solid brown sugar I mixed it with liquid ingredients.

Lesson Learn

In making cakes, separate wet and dry food ingredients. It will anticipate the texture of your cake to be bad.

Because this time I mixed my brown sugar into the wet ingredients in margarine and coconut milk, so the texture of my cake became bad. This was because at first, I thought that brown sugar would be difficult to mix evenly with flour and other powder ingredients. But in fact, by mixing brown sugar in a bowl of wet ingredients, it was a mistake.

Here are the ingredients I use with the minimum I have:

Ingredients

  • 150 grams of all-purpose flour
  • 50 grams of cocoa powder
  • pinch of salt
  • 1 teaspoon of baking soda
  • 230 ml of coconut milk
  • 60 ml of vegan butter/margarine
  • 150 ml of brown sugar

How To Make

  • Step 1

Preheat the oven to 180 degrees Celsius while making the dough. Combine flour, cocoa powder, salt, and baking soda in a bowl, stir well. Set aside.

I mix chopped brown sugar, coconut milk, and margarine. Mix well.

Then mix the flour mixture and the liquid mixture.


  • Step 4
    Brush the baking pan with vegetable oil or use baking paper.

Then add the mixture slowly. Then add roasted nuts like almond or peanut on the top.

Bake the cake for 30-40 minutes.


  • Step 6
    Let until cool about 20 minutes then remove from the pan.

    Serve. Can be added filling or topping according to your taste.

About taste

It's not too sweet because in this recipe I use brown sugar. But for those who don't like the taste too sweet, this cake can be accepted by their tongue.

This cake is suitable served as a friend to drink tea or coffee. But because of the bad texture, this cake is not worth serving as a dessert because it is less sweet and not soft.

Fortunately, the appearance of this cake is a quite helpful and quite comforting failure on the texture of this cake.
