DELICIOUS AND NUTRITIOUS VEGAN LUNCH
Hello everyone. I hope you are having an excellent week. Here in Argentina we are still cold, which makes it even more pleasant to go to the kitchen and cook something. Today, as always, I would like to share what I did for lunch. Ever since i started this vegan challenge for this month i’ve been craving some croquettes, but I did not want to do lentils again, so I was thinking and ended up making this delight that I share below. Hope you enjoy this as much as i did making it.
For my dish today I had thought to make some burgol wheat croquettes, accompanied by some chambray potatoes. The first thing I did was prepare the mixture for my croquettes, for this I have used:
- Trigo burgol (250 g)
- Grated carrot (1)
- Crushed garlic clove (1)
- Chives (just a little)
- Salt (1 tsp)
- Soy sauce (1 tsp)
The first thing I did was leave my burgol wheat in a container with hot water for 30 minutes.
After 30 minutes, we remove the water with a strainer and proceed to let it cool in the fridge for an hour.
The next thing is to add our chopped vegetables, along with the salt and the soy sauce. Additionally I have put a little parsley on it.
I also have placed a little breadcrumbs to make it easier for me to assemble the croquettes.
Once I have shaped the croquettes, I place them in a pan with olive oil over medium heat. 5 minutes on each side.
Once ready, I proceed to prepare the potatoes, which I made together with my roommate.
We prepare a mixture with olive oil, rosemary, garlic, parsley and salt. This we put in a pot mixed together with the potatoes and let it cook over low heat.
To accompany this delicious lunch, I made some boiled plantains, a classic that is not lacking in Venezuelan lunches and I wanted to add to remind my mom's meals a bit.
And this is how my plate looks. In the end I decided to add an avocado because I wanted to have something creamy on my plate. As you can see, a delicious dish with enough nutrients to help me continue the rest of the afternoon.
To drink I made a delicious pineapple smoothie, which I did not have to sweeten because the pineapple was quite sweet.
And that's how I made my delicious lunch. I thank my roommate who has helped me a little because it is difficult for me to take photos and at the same time cook. He is a very talented cook and he always gives me some advice and when we have the opportunity to create something together, the result is quite delicious.
