THIS IS HOW I MAKE MY PLANTAIN AREPAS AND MY VEGAN CHEESE.
Good day everyone, I hope you are well and you are having a great week. Mine has been pretty quiet. Today, as I try to do every morning, I would like to share what I ate for my breakfast. This time I decided to make some arepas, but this time I tried to do something different and add something extra, so I made arepa de plantains, which I share with you below. Additionally, I will also share how I made my vegan cheese to eat them.
MAKING OF THE VEGAN CHEESE.
INGREDIENTS
- Cashews (1/4 cup)
- Hot water (1 cup)
- Lemon juice (1/4 cup)
- Cassava starch (1 tablespoon)
- Garlic clove (1)
- Brewer's yeast (2 tablespoons)
- Salt (1 tsp)
PREPARATION
I left hydrating my cashews overnight in a glass of water, you can skip this step, it's just a personal choice.
The first thing I did was put my cashews in the blender with a cup of hot water.
Later I added the cassava starch, the garlic clove, the brewer's yeast, the lemon juice and the salt. Here it is important to blend well for at least 3 minutes so that there are no lumps.
Now we will light a pot over medium heat and add a little olive oil. We will proceed to add our mixture and we will mix without stopping until we have a thick mixture and it begins to bubble.

Now we remove it from the heat and leave it to rest in the fridge in a container previously oiled with a little olive oil. We will let it rest with envoplast paper for a couple of hours.
MAKING OF THE PLANTAIN AREPAS.
The first thing I did was to boil the plantain, which I chopped into three parts to make it cook faster.
Once boiled, I placed it in a bowl and crushed it to a puree. Later I added a little precooked cornmeal, a little water and a touch of salt. I was kneading until I got a smooth mixture and firm enough to shape my arepas. I let them cook about 5 minutes on each side over medium heat and with a little olive oil.
Once everything was ready, what was left was to try this cheese and arepa delight. Additionally, I wanted to eat some avocado, which is a rich source of vitamin E. I also wanted to add a little onion sprouts to them as I love them.
