Hello everyone, the other day I took some coriander leaves from the field and I thought of making warm quinoa with vegetables and giving it a different touch. The truth was delicious and it's something very simple to do.
Quinoa
Carrot
Pepper
Onion
Cashew nuts
Sauce: coriander, eggplant, lemon
Put the quinoa to cook, pour 300ml of water in a saucepan and 100gr of quinoa and when it starts boiling, lower it to a low heat and cover it and cook it for 20 minutes.
In a frying pan add the onion, pepper and carrot cut in small pieces and cook it with some oil for 10 minutes.
For the sauce put in the mixer a handful of coriander, olive oil and a dash of lemon and beat, if you want you can add a clove of garlic.
Once everything is cooked, mix everything together and add a handful of cashew nuts and black sesame seeds and enjoy.
