To be able to make a cake using the same dictum seemed beyond the pale. But my mom convinced me it could be done. I could not wait for her to share the recipe. As soon as i got it i started on it. I had this many times as a kid and i love it. I just never knew how she made it!
Since we don't get much exercise these days owing to the lockdown I had to make sure that we stick to the formula of Taste and Health. This fits right into that box. This cake is eggless, fat free and contains no refined flours.
The cake has a nice golden texture owing to the roasted Rava/Semolina. I personally like using dry fruits in my cake. They add a distinct flavour. However, they are not mandatory. I use dried cranberries. However one can use almost any kind of dry fruits to make it interesting for themselves.
You can have this as a light tea time snack or as dessert. If you wish to have it as dessert then just make the cake sweeter. In my case i have kept the sugar a bit on the lower side. Needless to mention kids just love this cake.
Ingredients
2 cups Rava
1 cup Curd
1.5 tbsp Ghee (Clarified butter)
1 cup Milk
1.5 cups Sugar
1/2 cup dried cranberries
1/2 Sliced almonds.
1 tsp Baking soda
1 tsp Vanilla Extract
1/2 Kilo Salt. (You can re-use it)
The Recipe
Start by preheating the cooker. Put a stand into it.Put the salt into it. Let it heat for a while. Keep the flame high. Keep the top closed but not sealed. Meanwhile lets prepare the cake mix.
Combine milk, sugar and ghee in a mixer.Blend until it has a smooth texture
Transfer the items into a bowl and add the curd. Mix Well.
Add the rava, vanilla extract and baking soda. Mix Well.
Add the dry fruits. Mix Well.Make sure the final mixture is not too watery.Else the cake will not hold togather.
Make sure the cake pan has butter paper at bottom to avoid sticking.
Put some dry fruits into the cake-pan.
Pour the rava mixture into the cake tin on top of the dry fruits.Sprinkle some dry fruits on top as well. That way you will have dry fruits all over the cake.
Bake in the preheated pressure cooker for an hour on a medium flame.
Switch off the flame. Open the cooker and leave it to cool.
Once it cools, use a knife to separate the cake from the edges of the cake pan.
Invert the pan into a plate.Gently pull the pan out.
There! Your fill it, shut it, forget it cake is ready!
Cut and serve with tea/coffee. You can store this in the refrigerator for 2-3 days.
