If not for the lockdown, I would never have known that I'm surrounded by so many accomplished pâtissiers. Just look at the supermarket shelves bereft of flour, yeast, & other baking essentials. Or at the 'ooh & aah' inducing social media baking photos. ⠀
I think that some people initially turned to baking in these few months to be in control. After all, we've all lost control of our lives in some way due to Covid-19, with no definite end in sight. Unlike other types of cooking, baking doesn't require that much intuition. If you have a good recipe, you follow it, & the deliciousness just sort of happens.⠀

But, then, along the way, these people fell in love ❤️ with the baking part of baking. The slow process of measuring, sifting & stirring; waiting as the dough rises in the oven & the house becomes saturated with the scents of butter & flour & chocolate. Then pulling the pans out of the oven & finding the dough transformed into something deliciously perfect.⠀
