Hi everyone! Today I am going to share a recipe on how to make raisin cake. This recipe is just a guide so feel free to tailor the recipe according to your personal preferences.
Ingredients
The following are the ingredients needed:
Before I get started, I would like to let you know that most of the ingredients are in grams and we used a weighing scale like this. However, I recommend using a digital scale as it is easier and has a higher accuracy.
- 200 grams of raisins
(soaked in hot water for 15 minutes and strained)
- 150 gram of castor sugar
- 1 tablespoon of milk powder
- ½ teaspoon baking powder
- 200 grams of plain flour
- 4 eggs
- 250 grams of butter
- One tablespoon of vanilla extract or flavouring
Method
First of all, add the castor sugar to a bowl. Then, add the butter to it and start mixing them both.
Feel free to use an electronic mixer to make the process faster.
Then, add the eggs one by one with intervals of mixing them. I find this to be the most time consuming part.

Add the vanilla extract and give it another mix.
Sieve half of the flour into the mixture. Then, mix it well with a mixer. After that, sieve and add the other half of the flour into it along with the baking powder. Mix the ingredients together.
Add the milk powder and mix them all with a mixer one last time.
The mixture will become creamy like this. The batter is almost ready.
Next, add about 80% of the raisins and mix them into the cake batter with a spatula.
Get a cake tray and put some butter all over the insides of it. Then put a baking sheet on it. Pour the batter into it. Make sure that the tray is slightly larger than the amount of the batter so that there is some space for your batter to rise into a cake while baking later on.
This is how it looks after the batter has settled in the tray.
Sprinkle the rest of the raisins on top of the cake like this.
Preheat the oven to 160 °C. Once the oven light goes off (an indicator that the oven is hot enough), place the tray of the batter inside and bake for 45 minutes.
This is after 10 minutes of putting it in the oven. Check how the batter has already rose compared to the beginning.
This is after about 35 minutes. The cake is almost ready. I could smell it at this point and almost ate it in my imagination :D
The raisin cake is done! It is fresh from the oven. It is best to let it cool for a few minutes before you begin to cut it into little pieces to serve.
My mom took the cake out and placed it on another tray to cut it.
This is how the cake pieces look like after cutting. You can find at least 3 raisins in each piece of cake. They are ready to serve.
I have already eaten them :D They tasted great. I am not a person with a sweet-tooth and hence, I prefer my desserts to only have a subtle hint of sweetness. If you prefer your cakes to be sweeter, then add more castor sugar. I suggest you to make a test batch of this recipe first so that you can figure out what amount works best for you.
