Sumac is a dark crimson spice used in many Middle Eastern dishes. It has a sharp tangy taste. It is essentially dried berries from a bush indigenous to the Middle Eastern area. Anyone who has had an authentic Lebanese Fatouch salad will have seen it sprinkled heavily over the lettuce and pita chips.
I personally like to add sumac to my fried eggs to give them a different dimension. My mother spreads it over roast chicken at every opportunity. Sprinkle sumac over some juicy grilled kababs and I guarantee you will not have them any other way again.
If you have access to a Middle Eastern grocery store I would highly recommend you ask them if they have it.
Mix a large table spoon of sumac in a glass jar with 2 table spoons of lemon juice , 4 table spoons of olive oil, a pinch of salt and fresh black pepper. Shake well and drizzle over any salad. Enjoy!
