Ingredients:

1 large onion, chopped
4 garlic cloves, minced
2 lbs boneless chicken or lamb, cut into bite-sized pieces
2 large carrots, peeled and sliced
2 large potatoes, peeled and cut into bite-sized pieces
1 cup dried apricots, chopped
1 cup green olives, pitted
1 cup chicken or beef broth
1 cup canned chickpeas, drained
1/2 tsp cumin
1/2 tsp paprika
1/2 tsp cinnamon
1/4 tsp cayenne pepper (optional)
Salt and pepper to taste
2 tbsp olive oil
Fresh cilantro or parsley for garnish (optional)

Instructions:

Heat the olive oil in a large tagine or Dutch oven over medium heat. Add the onions and garlic and cook until soft and fragrant, about 5 minutes.

Add the chicken or lamb to the pan and brown on all sides, about 10 minutes.

Add the carrots, potatoes, apricots, olives, broth, chickpeas, cumin, paprika, cinnamon, cayenne pepper (if using), salt, and pepper to the pan. Stir to combine.

Reduce heat to low and cover the tagine or Dutch oven with a lid. Let the stew simmer for about 1 hour, stirring occasionally, until the meat is tender and the vegetables are cooked through.

Serve the tagine hot, garnished with fresh cilantro or parsley, if desired.

Note: If using a traditional Moroccan tagine, be sure to place the tagine on a heat diffuser on the stovetop to avoid damaging the clay pot. Enjoy!
