Spicy Chicken Sauce rolls- Full recipe by @aniqamashkoor

Hey foodies!
This is @aniqamashkoor and today I'll be sharing a yummy recipe of Chicken tikka sauce roll.
At first I made the tikka masala at home and then made these rolls. I'll be discussing each and every step in detailed so you don't have any problem in preparing it. Let's get started.

TIKKA MASALA

Ingredients

  • Green cardamom 5-6
  • Black cardamom 2
  • Cinnamon sticks 3-4
  • Cloves 6-7
  • Coriander seeds 2 & ½ tbs
  • Cumin seeds 1 & ½ tbs
  • Mace 1 piece
  • Star anise 1 piece
  • Black peppercorns 12-13
  • Salt 1 & ½ tbs or to taste
  • Turmeric powder 1 tsp
  • Red chili powder 1 & ½ tbs
  • Citric acid ½ tsp

The quantity mentioned above is for almost 2 and half kg chicken. I made it double quantity for storing purpose.

Procedure

First collect all ingredients and put them all together for your ease.

Then take frying pan and add green cardamom, black cardamom, cinnamon sticks, cloves and dry roast for 30 seconds.

Then add coriander seeds, cumin seed and dry roast until fragrant.

Since we have to grind all the mixture so let it cool down.
Now take your grinder, add roasted spices, mace, star anise, dried ginger, black peppercorns and grind to make a fine powder.
Add salt, turmeric powder, red chili powder, red chili powder, citric acid, and grind again.

The Chicken tikka masala is ready and can be stored in air tight container for up to 6 months (yields 90 gms for 2 kg tikka)

FOR PREPARING CHICKEN

Now take small boneless pieces of chicken. Marinate it and keep in refrigerator for half hour.

  • Yoghurt 125 grms
  • Dry tikka masala we prepared 4 tbs

In frying pan, add oil and marinated chicken and mix it well for 2-3 minutes.
Then cover and cook on medium flame and keep the dryness according to your will. I left it bit saucy.

PREPARATION OF SPICY YOGURT SAUCE

Ingredients

  • Yougurt
  • Green chillies
  • Red chili powder
  • Cumin seeds
  • Fresh coriander
  • Salt

Procedure

In grinder, add red chili powder, cumin seeds, salt, green chilies, fresh coriander and yogurt, blend well & set aside.



Cut the onion and prepare the paratha. For paratha you can use any either frozen one or freshly made.


ASSEMBLING

Now when we have prepared everything its the final time to assemble all the ingredients together.
First I placed the paratha then I added the spicy yoghurt sauce over it I placed good amount of chicken then onions ad cucumber add a little amount of suce more and tadaaaa!! it's ready to be roll. You can wrap it in butter paper too and serve it.



This was all from my side. They tasted spicy and yummy. For those who prefer less spice can skip green chilies in the sauce and it will taste perfect. Do try this at your home. This tikka masala is so good for preparing random chicken too.
