Hello steemians,

I am very glad to share with you my lovely recipe of beans porridge and Ripe plantain puree.

Beans and ripe plantain puree is one of the most loved food among Nigerians. Its usually loved by many because of its nutritional value and its easy method of preparation. It is also less expensive.

Benefits of Beans.

 1. Protein

Protein is a vital nutrient that plays a key role in maintaining and repairing the body. Beans are high in amino acids, the building blocks of protein.

2. Nutrients

Beans contain several vital nutrients, including folate. Folate is essential for overall health, to make healthy red blood cells, and help prevent neural tube defects in a fetus during pregnancy.

3. Serves as Antioxidants

Antioxidants fight the effects of free radicals, which are damaging chemicals that the body produces during metabolism and other processes.

   4.  Rich in fiber

Beans may help stabilize blood glucose levels or even prevent diabetes. Beans are high in fiber, which can help lower blood glucose.

 5. Healthy Eating.

When a person eats beans, the fiber and healthful starches they contain can help create a feeling of fullness and satisfaction.

Ingredients

  1. 2 cups of Beans
  2. 6 fingers of ripe plantain
  3. 50g of Native crayfish
  4. 10cl of palm oil
  5. 8 ounce of onions
  6. 2 cubes of seasoning
  7. 1½ table spoon of salt
  8. 1 table spoon of grounded black pepper
  9. Water

Procedure

  • Select your Beans, in other to remove stones and chaff.

  • Wash selected beans, put in a pot,and allow to parboil for 15mins.
    N/B; Hot-soaking beans and discarding the water used for soaking, boiling, or cooking them may help reduce digestive symptoms. People can take digestive enzymes as supplements to help the body digest beans.

  • After parboiling for 15mins, sieve and pour water away.

  • After sieving, pour into another pot and boil for 45mins.

For Ripe plantain

  • peel plantain to remove outer cover

* Blend plantain or pound with a mortar and pistol to form puree.

  • After 45mins of boiling beans, add your ripe plantain puree.

  • Stir and allow to boil for 5mins.

  • After 5mins, add grounded crayfish, palmoil, seasoning, salt,onion and grounded black pepper.

  • Stir and allow to cook for 5mins

After 5mins, Bring down the Beans and ripe plantain puree.
It can be served hot or cold.
It can be served with bread or granulated cassava flakes.
