Hello fellow food steemians, hope we are all doing well. I know we are having a great day. Today i am entering a contest presented by steemfood with the topic Promote Your Favorite Traditional Dessert.
I so much love this contest and would want to showcase how to make one of the traditional desserts in my place.
Today, I am going to prepare a dessert called 'Abacha'. This is a dessert served in my locality during ceremonies, when you have have important visitors, unexpected visitors or the like.
Ingredients

9 | potash water |
10 | utazi leaf(GANGRONEMA latifolium) |
11 | ogiri okpei seasonning food flavor |
12 | Onions |
Steps.
● Soak the dried cassava spikes in a bowl with water to soften.
● Wash the stock fish, put it in a pot. Also cut and wash the beef hide, add in the pot.
Chopping the beef hide in small pieces.
● Add salt, pounded pepper, cut some onions too and add to the pot.
● Add a cube of knorr seasoning.
● Add some quantity of water and for till the beef hide and stockfish soften for consumption.
Steaming the above items.
While this is still cooking,
Now we want to make a sauce called Ngo. This sauce is used to mix all the other ingredients together.
To make the sauce
● Put some potash water in another bowl to your desired quantity, normally small quantity is used.
● Add Red oil to your desired quantity. More can be added if the mixture you have is not enough for the dessert.
● Stir to mix both together.
● Then pour the coooked stockfish and beefhide with the small water remaining in it into the pot of sauce.
● Stir very well to mix together.
Ngo Sauce mixed together with the stockfish and beef hide or skin as you desire.
● Remove the Nsisa and put in a sifter, so that the water can be drained.
● Then add the Nsisa drained from water into the pot or bowl containing the sauce, beef hide and stockfish.
● Stir to mix together very well
Turning and stirring them together.
Stir until the mixture is thoroughly mixed, add salt to taste too, and add red oil if the one in the mixture is not enough.
● Pound the Ogiri Okpei and add to the Abacha being prepared.
● Pound or grind the crayfish and add to it as well.
● Cut some fresh onions and add when you are done.
● Cut the utazi leaf and add too. Stir the whole mixture together.

The above processes now give birth to this delicious dessert.
Ready to be eaten.
