Ingredients for the tomatoes sauce
- 10 large fresh tomatoes (1kg)
- 11 bells of fresh pepper (300g)
- One large onion bulb
- Two seasoning cubes (I used Maggi)
- Vegetable oil (250ml)
- Salt to taste
- 3 big fresh eggs
Method
Step 1: I made sure I prepared all of the ingredients I would be using. I sliced my tomatoes and onion into small pieces, grounded the pepper and whisked the eggs.

Step 2: I put my pot on fire, added the vegetable oil and allowed it to heat up. I then added the tomatoes, onion and pepper and allowed it to cook for about 15mins (I usually allow my tomatoes to cook properly because I don't like the sour taste). Thereafter, I add the seasoning cubes and salt and let it cook for about 4mins.

Step 3: After I was sure it was cooked to my taste, I added the already whisked egg and stirred until the eggs began to form balls in the sauce. I then let it boil for another 2mins before letting the pot down.

The tomatoes sauce isn't eaten alone, you'll need something to go with it like rice, beans, yam, plantain etc. For me, I used rice and I'll just tell you how I cooked my rice.
How to prepare white rice
Ingredients
- 3 cups of rice (630g)
- Salt to taste
Method
Step 1: Put your desired quantity of rice into a pot, add water and place on fire to boil.

Step 2: after the rice has boiled, take it down, wash it properly using a strainer and put it back into the pot and then on fire.
Step 3: Add some water and salt into the pot and allow it to cook till there's no water left and your parboiled rice is set to be eaten.
Rice is properly cooked and ready to be eaten!
Now, dish out your rice and tomatoes sauce and enjoy it's goodness.
It's quite easy to make and the entire process shouldn't take more than 1hr 30mins.
