HOW TO PREPARE AFANG SOUP
Introduction
Afang is known as Spinach leave. It is called AFANG both in Efik and Ibibio languages. Here in Nigeria Afang is regarded as the most enjoyable and delicious dish, and it serves all purposes in any occasion. A good preparation of it will add colour to your gathering, be it weddings, burial, house dedication, naming ceremony or anniversary.
PREPARATION PROPER
Condiments used in Afang soup:
Pepper, Maggi, crayfish, roasted fish like (Inianga), palm oil, water, stock fish, periwinkle, etc.
Afang could be bought in the local market or harvested in one's garden.
First, it must be washed to clean the dirt particles.
Secondly, you slice them, thereafter, you pound them to give you a good smooth.
Thirdly, water leaves are added to give a nice blend.
HOW TO COOK AFANG SOUP
You put water in the fire- you can decide to use small pot or big depending on how much you want to cook. After 3 minutes, you put crayfish, pepper, and other condiments. The next to add is water leaves, you wait for 2 minutes before you add Afang. The last will be palm oil.
