Hello readers, trust you all are having a wonderful time today.
Well to start with, since I was introduced to this group, I have not made use of this community before until today.

And here is what I would like to entertain you all with. Have you ever tried to prepare beans and plantain porridge before?

In my country Nigeria, this is one of those meals which is nutritious and healthy for living. Plantain can be prepared in so many unique processes like roasting boiling or cooking with any other food combination.

I love plantain and beans so much that I can go on eating this nutritive combination for weeks without getting wearied. Hehehe 😂

Now let's move on to how I prepared the beans and plantain porridge in my way. Other individual may adopt different methods for preparing theirs but in the course of this article, I will be showing you how I prepared my own.

It's so simple and won't take much of your time. So steal just five minutes from your time to digest this post.

INGREDIENTS

These were the ingredients I used while preparing the meal.
• 4 cups of beans
• 2 bunch of partially ripe plantain
• Onion bulbs
• small quantity of African spinach leaves.
• one cup of crayfish
• 1/2 cup of palm oil
• 1/2 spoon of salt
• 3 cubes of Royco

STEPS

Beans

After I have measured the number of beans I needed for the cooking, I went on to pick foreign substances like Stones out from the beans.

And it took me few minutes to remove those unwanted substances from the beans. I have to undergo this process because I was using the local beans available here.

When I was done, I set up my pot ready with 3 cups of water in it.

I rinsed the beans carefully before transferring them into the pot of hot water.

After 20 minutes of cooking the beans, I then drained the water and washed the beans a second time before adding the beans back into the pot of water which was on heat already.

Please remember to always check the size of beans you are intending to cook and the amount of water you are using for the cooking

Now, the next step was to add red palm oil into the pot of beans.

This was when I added my red palm oil into the Beans

Then I put sliced 3 bulbs of onion and the grounded crayfish into the pot.

Again, I added salt and the Royco cubes into the pot of beans before stirring thoroughly (this was to make sure that the recent ingredients are mixed properly with the beans).

Remember to taste the meal to know if the whole seasoning is in normal proportion.
Then I covered the pot and let it cook on it for 15 minutes.

Meanwhile, I washed and peeled the plantain and cut it into a thick round-like shape.

I achieved this by cutting off both ends of the plantain with a sharp knife. This made it so easy for me to detached the skin of the plantain after I had slit a shallow line down along the seam of the plantain.

Again, I watched and chopped the African spinach leaves into pieces.

When I was done with that, I went on to add the diced plantain to the pot of beans then stirred a little to avoid burning the beans.

After I have added the diced plantain

I allowed the beans to cook for another 5 minutes before adding the chopped African spinach leaves. I allowed cooking for a further 4 minutes on low heat.
