JELLOF RICE

Ingredients:

Add the minced garlic and cook for another minute.

Add the chopped tomatoes, tomato paste, smoked paprika, curry powder, dried thyme, salt, and pepper to the pot. Cook for 5-7 minutes until the tomato mixture has reduced and thickened.

Add the chicken broth or water to the pot and stir well. Bring the mixture to a boil.

Add the rinsed rice to the pot and stir well to combine. Reduce the heat to low, cover the pot with a lid, and let the rice cook for about 20-25 minutes until the liquid has been absorbed and the rice is cooked through.

Fluff the rice with a fork and serve hot.
