This time I will share a delicious recipe for cooking mackerel pepes. In this recipe, I stick to Acehnese pepes which are rich in spices. The secret of this recipe is the use of sunti acid which is a typical Aceh spice. Asam sunti made from fermented vegetable starfruit.
Kali ini saya akan membagikan resep enak memasak pepes ikan kembung. Dalam resep ini saya tetap menggunakan pepes ala Aceh yang kaya akan rempah-rempah. Rahasia resep ini adalah pada penggunaan asam sunti yang merupakan bumbu khas Aceh. Asam sunti terbuat dari belimbing sayur yang difregmentasi.
Ingredients

- Fish mackerel ½ kg
- 5 cloves of red onion
- Asam sunti 10 pieces
- 30 pieces of cayenne pepper
- 1 teaspoon of turmeric
- 5 green chillies
- Salt to taste
- 1 lime
- Banana leaf
- 6 tablespoons of cooking oil
Bloated fish

- Ikan kembung ½ kg
- Bawang merah 5 siung
- Asam sunti 10 buah
- Cabe rawit 30 buah
- Kunyit 1 sendok the
- Cabe hijau 5 buah
- Garam secukupnya
- Jeruk nipis 1 buah
- Daun pisang
- Minyak goreng 6 sendok makan

Bersihkan ikan kembung. Cuci dengan bersih, kemudian taburi garam dan jeruk nipis.

Puree shallots, asam sunti, cayenne pepper, and turmeric using a blender or other smoothing tool.
Tahap Meracik Bumbu
Haluskan bawang merah, asam sunti, cabe rawit, dan kunyit menggunakan blender atau alat penghalus lainnya.

Cooking Stage
Stir the spices that have been mashed with fish. Mix well. Pour cooking oil into the spices and fish mixture. Add green chillies to taste. Wrap in banana leaves. Each pack is 5-6 fish. Try not to rip the banana leaves when wrapped. Put it in a skillet that has been coated with old banana leaves on top. Heat and pour a little water for the roasting process. Cover until the water is reduced. Don't forget to turn the wrap over after the water has shrunk. Wait until cooked and ready to serve as shown below.

Aduk bumbu yang telah dihaluskan dengan ikan. Aduk hingga merata. Tuangkan minyak goreng ke dalam campuran bumbu dan ikan. Tambahkan potongan cabe hijau sesuai selera. Bungkus dengan daun pisang. Setiap bungkus sebanyak 5 – 6 ekor ikan. Usahakan daun pisang tidak robek saat dibungkus. Masukkan dalam kuali yang telah dilapisi aun pisang tua di atasnya. Panaskan dan tuangkan sedikit air untuk proses pemanggangan. Tutup sampai ar menyusut. Jangan lupa untuk membalik bungkusan setelah air menyusut. Tunggu hingga matang dan siap disajikan seperti gambar di bawah.
