Sweet corn and rice porridge for the toothless
Saleum Foodies 🥣🥗🍨
During the fasting month for the muslim aka Ramadhan, we usually change our habit of having meals. From 3 times a day (commonly breakfast, lunch and dinner) to 2 times a day (breakfast after dusk (ifthar) and breakfast before dawn (sahoor).
And dessert or any Sweet food usually become the main menu for the breakfast after dusk in the evening 🌆. For the last 5 years I enjoy the fasting month with my wife and my father. So, preparing the dessert is her responsibility, even tough we sometimes buy foods from many many food sellers around the neighborhood.
My wife would prefer prepared the meals for three of us by herself because in that way she can assure that my toothless, 82 yo father will never got into trouble with the food he eats.
The common desserts she prepare usually any type of porridges and compote. Toothless friendly for sure. So, this time she made sweet corn porridge 😁 and you know how crunchy the sweet corn even after you boil it for hours😉 and let's see how she did it.
She combed the corns with the knife and put it in the food processor for a minute
Then she cook it on the stove after adding about 500ml water to soften the blended sweet corn.
Add the pandan leaf to make it more fragrant, add another 300ml coconut milk after 20 minutes or the sweet corn soften
My wife loves pandan leaf for sure, she always add one piece of the leaf in every porridge she made. After adding the coconut milk, she add about 200 grams cooked rice which also has been crushing in the food processor. Not the glutinous rice, just common rice. Add a tsp salt and 5 tsp sugar (optional because the corn already sweet).
Cook it for another 10 minutes and keep stirring it up. Then put off the fire, let it cool and then serve.
The rice And the toothless friendly sweet corn porridge
Eating this porridge on breakfast usually made us quite full and no need to eat other food after that. No food coloring needed for sure😉.
