How To Make My Local Delicacy: Moi-Moi @favour216

INTRODUCTION

Moi-Moi is a common food in the South West region of Nigeria. It made from blended beans and can be garnished according to individual taste. Moi-moi is very rich in protein and carbohydrates.

INGREDIENTS

Beans
Crayfish
Fish
Pepper
Onions
Seasoning
Leaves
Vegetable Oil

Steps To Make The Blended Beans

Firstly I peel the beans, usually the beans is brown but we need to make it white before blending. To do this I soak the beans in water for some time and then I peel off the back of the beans which is the shaft.
After peeling, I careful sieve off the shaft and dispose appropriately.
Then I get my pepper and onions ready, I remove the stalk and also rinse neatly.

I also to rinse my crayfish neatly.
I boil the fish with little seasoning,once it is boiled,I carefully debone the fish and also flake the fish.
Having done all of this, I add the pepper, onions, crayfish and bones gotten from the boiled fish to the peeled beans.

Then I blend my mixture.

How To Cook The Moi Moi

With this my moi moi is almost ready. Firstly I stir my mixture carefully,this is very important as it can affect the taste of the moi-moi. Then I add the vegetable oil, a small quantity is enough, I stir the mixture again and then I add my seasoning to the mixture.

These are leaves used to package the moi moi, The leaves are carefully cleaned and stalk removed.

The stalk are carefully arranged at the bottom of the pot, little water is added to the pot also and the water is allowed to boil.

The is beacause is the process used in preparing moi moi is steaming and not boiling, hence the reason why you need little water.

The leaves are folded in a particular pattern, this depends on the pattern convenient for you, then I pour in the moi moi mixture and I carefully fold in the leave and I place it in the pot.

Once the mixture is exhausted, I cover the pot tightly. I allow my moi moi to cook for about 45mins,then I go to check. By this time by moi moi is ready to be eaten.

Moi moi can be eaten with pap, custard, bread or garri depending on what you want. It can also be eaten alone.
