THE TAHINI MASALA PARTY! (My homemade pasta with vegetables and tahini sauce)

Hello again Steemfoods!

You know, frustration has a mysterious way of subtly accumulating my inspiration.
It is often only after I was failing and feeling helpless, that I could gather my courage and strengthen my resolve. Inspiration is much the same; when we feel we are void of it’s presence, we are finally pushed to search for it beyond any limits!

And so with help from a friend and a lack of any cooking oil in the house, I present to you:

THE TAHINI MASALA PARTY!

preparation time : 20-30 minutes

The Ingredients:

  • Wholegrain fusilli pasta(or any other kind) – 100g
  • Carrot - 1
  • Red onion - 1
  • A red pepper - 1
  • Chickpeas – 100gr
  • Earth(Jerusalem) artichoke – 3 pcs.
  • Turmeric root – 1 small pcs.
  • Smoked tofu(optional) – a few squares
  • White sesame tahini – 150g.
  • Lemon – 1
  • Garlic – 1 clove
  • Salt and black pepper
  • Curry – 1/3 teaspoon
  • Powdered cumin - 1 teaspoon
  • Red pepper – ½ teaspoon (optional)
  • Soy sauce

These are the product amounts for 2 hungry people
I know it may seem like much, but making it is actually quite simple and easy!

The preparation:

Prepare to infuse your whole kitchen with the tastes and aromas of the mystical lands!
Accompanied by something different, this meal will be comprised of two parts:
The food and The sauce.

The food:

You want your carrot cut in medium sized rings (because we don’t want it too soft after cooking)
The onion you should cut into bigger and longer pieces than usual.

The red pepper is good in any shape you want, ideally long thin stripes or just cubes.

Earth artichokes should be cut into small cube pieces and the turmeric into small round ones.
Also cut your tofu into little cubes.

(Trust me you'll want more turmeric root than this)
  • Now in a not so shallow frying pan, on medium-low heat, put in the carrots and onions along with some chickpea water or just regular water. Salt a bit. Put a lid on and let them steam a bit.
  • After 5 minutes, put in the red peppers and take off the lid.

  • At this point in a separate pot boil water for the fusilli pasta.
    Put it in with some salt and cook for 8-10 minutes.

  • After the vegetables are cooked a little, but you don’t want them fully soft, add the turmeric root and earth artichokes and stir a bit. Add some of the soy sauce as a substitute for the evaporating chickpea water.

  • Here is where you want to put in the spices of your choice (cumin, curry, black pepper, salt)

  • Add the chickpeas and the tofu into the pan and stir for about another 5 minutes and your dish should be now ready!
    Take out the pasta, strain it and run it through cold water, then combine it with the pan of vegetables!
    Set aside to cool a bit, until you prepare your quick and easy special sauce!
The sauce:

I really like this one, because I’m a big fan of tahini with honey, but it was just recently that I realized, sweet taste isn’t the only way tahini can go, so I tried something very simple, which I’m sure I haven’t invented of course, but I sure did feel like I created something new for myself with this sauce!

  • In a small bowl squeeze your lemon and remove all the seeds.

  • Next you want to cut your garlic up into as smaller pieces as you can and put them in with the lemon juice.

  • Then comes the tahini and some salt!
  • A good idea is to put in a little of the chickpea water and it will do wonders for this sauce, or you could just use regular water, but don’t put in too much. Add in some grounded black pepper and a little red pepper and turmeric for charm.

  • Now start stirring with some speed and you will notice that the quick motion will make the sauce become thicker. Stir until it’s pleasantly thick.

  • Your sauce is ready!

Now put everything together!

As you enjoy the spicy texture of your main course meal, you can at will combine it with this magnificent tahini sauce, which is a magical addition to most any other meal you make and so
is a standalone recipe in it’s own right!
