Hello Food Lovers!
The other night my wife discovered we had some old, small bits of very dry looking ginger. I told her to just discard them and use the fresh ones we just bought from the market. After about half an hour I saw her working on something in the kitchen. When I asked what she was up to she said she didn't want to waste the ginger. She was painstakingly peeling the skin, scooping out the blighted portions and chopping them into small sizes.
She used the blender flat blade to finely chop or mill the ginger.
Afterwards she took some scallions or spring onions, cut them up, washed them and milled them, this time using the food processor.
Cooking time! She heated cooking oil in a small pan. Then she placed in the ginger and fried it for a minute or so.
Added the scallions.
Added salt and fried for another minute or until the fragrance of the ginger and scallion come out.
And voila! She just made a Ginger Scallion Sauce.
What is Ginger Scallion Sauce? As you saw from above, it is an oil based sauce with very very simple ingredients. It is an all-around sauce that goes well with practically any viand like meat, chicken, rice and noodles. It is a great appetizer as it adds flavor to almost anything one eats.
