How to cook Pad Thai | Thailand's famous cuisine

Pad thai is a stir-fried rice noodle dish commonly that is easily be found in any place in Thailand. It can be in street foods or restaurants as part of the country's cuisine. Pad thai has always been my favorite while I was in Chiang Mai. Me and my husband usually go to our favorite street food that sells the best Pad thai in the country.

Phad thai is typically made with rice noodles, either chicken, beef, or tofu, peanuts, scrambled eggs, bean sprouts and you can also mix up with other vegetables you want from your dish.

So today, I am going to share with you all my very own version of pad thai which I have learned while watching the street food vendor in Chiang Mai. We needto keep in mind that pad thai is all about flavor balance of the sauce, and the texture of noodles.

We need the following ingredients

400 grams rice noodle
250 grams chicken
120 grams bean sprouts
2 egss
210 ml chicken broth
4 tbsp soy sauce
4 tbsp fish sauce
2 tbsp brown sugar
4 tbsp cooking oil
3 cloves garlic
1 medium red onion
1 tbsp chili flakes
1 tbsp dried basil leaves (fresh is good too)
crushed peanuts, sliced lemon, green onions for garnishing

Procedure

Preparation for chicken broth

  • Since I was using the quarter leg part of the chicken, I need to remove the meat first and then boil the remaining part and bones for making chicken broth. Add a little bit of salt. When done, set aside.

Preparation for the pad thai sauce

  • Mix the chicken broth, soy sauce, fish sauce, lime juice, and brown sugar in a bowl and mix them well. Set aside.

Preparation for the noodles

  • Boil the noodles until it's al dente, not mushy or over cooked. When done, washed thoroughly with normal temperature water to prevent from sticking. Then cut the noodles into half. Set aside.

Ready to stir-fry

  • Slice the chicken meat thinly. Then the red onion and garlic.

  • Saute the chicken with 4 tbsp of cooking oil. Add garlic and a little bit of fish sauce to taste.

  • Then, make a space for the scramble eggs and add the red onion.

  • Add the noodles, bean sprouts, crushed peanuts and the pad thai sauce into the pan. Mix them well. Add chili flakes depending on how spicy you like.

  • Continue mixing in a low heat so not to over cooked the noodles and the bean sprouts.

And our pad thai is ready to serve garnished with more peanuts and lime. Ready to eat! You can add more chili flakes or sriracha for more spicy flavor.

Preparation and cooking time 20-25 minutes
