Okra soup is a very delicious and mouth watering soup/stew that is much loved by the people in west African especially in Nigeria.

it's a rich source of minerals, vitamins, dietary fiber, potassium, carbohydrates, protein and Calcium, In French speaking countries is known as gumbo.
Okro is known for been slippery and have a viscous texture which makes it a perfect soup/stew for anyone who is leery of its consistency,It can be perpared in different ways both with or without palm oil or vegetables leaf or even Ogbono. This is also one of the easiest soup you can prepare this soup.
Here are the ingredients:
- Fresh Okro (minced)
- Vegetable leaf
- Cray Fish
- Palm Oil
- Cow/Goat Meat
- Periwinkle
- Cow Skin
- Stock Fish
- Smoked/dried fish
- Red bell pepper/groundedpepper, medium onions and seasoning
Okro is always cooked on medium heat to retain the nutrients and not burn it off with heat.
Now Let me take you on a tour on how it's perpared:
COOKING FROM SCRATCH
Frist, create a base stock by washing the stock fish, cow meat and cow skin and put in the pot with water that covers the meats add salt, seasoning powder(season moderately), minced Onions and red ball pepper,and start cooking till soft not mushy,
Cook for about 40 minutes.
Second, While the stock fish, cow skin and meat are cooking, wash the okro and chop by hand with the aid of a kitchen knife or food processor into a desirable sharp and set aside.
Third, Mince onions, red ball pepper and set aside ready to be used to cook the soup. Check on and stir the stock fish ,meat and cow skin,
Four, Remove from heat immediately and pour only the stock from the fish,meat and cowskin into the pot ready to be used for cooking the soup.
PROCESS AFTER THE ABOVE IS DONE
Add water to your desired quantity to the pot along with the stock made from the fish and meat and boil for 10 minutes.
Thereafter, pour all ingredients expect Okro,Vegetable leaf and palm oil, to the pot.
After 5 minutes, pour your mince/chopped Okro to the pot and add palm oil to a desired quantity (optional).
After 2 minutes, put the sliced vegetable leaf into the pot and add salt to taste, add another palm oil if not enough.
After that, you remove your pot from the heat and turn off.
This soup can be served With Eba, Fufu or Amala depends on your choices.
