Hello steemians and steemfood members, After reviewing the post meant for newcomers in the Steem Foods community, Am so excited to share with you share with you a soup recipe.

Before I proceed, I will like to express my appreciation and thanks to @alikoc07 for giving me this wonderful privilege and for creating this tremendous community which has avail me the opportunity to share with you my content in @steemfoods.

Today, I want to share with you how to perpare a very treasured soup valued by africans / Nigerians, It's called White Soup (Locally Known as Ofe Nsala)

The white soup is known for it light texture and it a very delicious delicacy which is also easy to prepare with the use of your stock and mashed yams.

HERE IS A FULL VIDEO/TUTORIAL ON HOW TO PERPARE THE NIGERIA WHITE SOUP (OFE NSALA)

HEALTH BENEFITS:

  • Contains Vitamin C AND E,
  • Omega..3 fatty acid
  • Reduce the risk of heart problems
  • Boost the immune system
  • Contains potassium
  • Also can be prepared as a special gift for mothers who just gave birth.

It's called white soup because the use of palm oil is not in the preparation of this soup unlike other traditional soups or delicacy.

HERE IS A LIST OF THE INGREDIENTS:

  • Yam {Grounded}
  • Crayfish {Grounded}
  • Onions {Chopped}
  • Pepper
  • Salt {to taste\optional}
  • Uziza Leaf {also known as scent leaf}
  • Dried fish
  • Stock Fish {Optional}
  • Goat meat or Live Chicken {which comes in an assorted way that is with liver, towel and its intestines}

This soup is prepared with chicken, cat fish or even goat meat, so you can make a choose of which protein you would be using for the soup.

If yam is not available you can use yam flour and if getting a fresh uziza or utazi leaf which is also known as scent leaf is difficult, you can use the dried one’s because that leaf has a very pleasant aroma and can add hotness to the soup.

THE COOKING PROCEDURES

{STARTING UP WITH THE PRE-PREPARATION}

  • TIME DURATION: 50 MINUTES

You have to wash the chicken or goat meat, along with the dried fish, add onions and seasoning and then boil on fire for 20 minutes.

While cooking those things, boil your yam till it get soft and then pound it in a mortar or blender or even a food processor, you can also add water to the yam so that the consistency wouldn’t be too thick and would dissolve faster and for easy preparation. This might take 30 minutes.

MAIN COOKING PROCESS:

  • TIME DURATION: (30 MINTUES)
First, light up your gas stove and pour in the base stock made from the goat meat or chicken, dried fish and stock fish to a pot then allow to heat for five minutes.

Second, get your crayfish, onions, stock fish and dried fish ready and pour them inside the pot,

Pour in your dried fish and stock fish then your onions and your cray fish and cover, allow to heat for five minutes.

Third, you pour in this👇as an alternative to calabash Nutmeg

This would serve as another source of flavor or aroma to the soup, and allow to heat for five minutes along with the pervious step.

Fourth , pour in your grounded yam and stir up then pour in your already cooked goat meat into the pot and stir up to fix in to the pot size and you can see that truly the goat meat comes with assorted meat as earlier mention. Allow to heat for five minutes.

Lastly, add your scent leaf that is the Uziza leaf or utazi to the pot and stir remember that you will add a little of that leaf to reduce the bitterness although medicine.
