To make Kebabs,
500 grams boneless chicken
5 garlic cloves
1/2 inch piece of ginger
2-3 green chilies
1 tbsp Green Coriander
1 tsp mixed herb
6-8 basil leaves
1/2 tsp oregano
1/2 tsp black pepper powder
salt as per taste
For filling 6-8 cheese slices
oil for pan fry
For making gravy,
1 onion finely chopped
whole red chili
2 bay leaves
1 cinnamon stick
3-4 black pepper (whole)
1/2 tsp garlic paste
1/2 tsp ginger paste
2-3 green chilies finely chopped
1 tsp garam masala
1 cup curd (1/2- 1/2 in separate bowl)
3/4 cup mayonnaise
3/4 cup cheese
3/4 cup fresh cream
1/2 cup milk
1 tsp chilli flakes
some fresh basil leaves
dried basil leaves
salt as per taste
1/4 cup fried onions
for rice,
500 grams rice
salt as per taste
1 tsp lemon juice.
Method.. ..............................................
First put the kebab masala and boneless chicken in a mixer jar and grind it till it becomes fine and take it out in a vessel
Now by applying a little water in the hand, keeping the ground spices in the palm, keep slices of cheese in the middle and cover it from all sides and make long long kebabs.3. Make kebabs by stuffing cheese slices in all the ground spices
. Now put oil in a pan, fry all the kebabs and take them out when they cool down, then cut them into 2 to 3 pieces.
On the other side wash the rice thoroughly and keep it soaked.
Now put some salt, lemon juice, some oil in a vessel and cook till it comes to a boil.Now put half the curd, milk, mayonnaise and cream in a bowl, mix it well and keep it aside.
Put oil in a separate vessel and heat it and add bay leaves and cinnamon, whole red chillies and onions and fry till it changes color.
Now add chopped green chilies to it and fry it lightly.
Add garlic ginger paste, black pepper and garam masala powder and fry it a little and add the remaining curd and fry it well.
Now add cheese and cream mixture and basil leaves and salt and mix and let the mixture thicken slightly.Now add pre-fried and chopped kebab pieces and chopped coriander, chilli flakes and mix it well.
For folding, first place some cooked rice in a deep vessel at the bottom, now put a layer of creamy kebab mixture on top.
Apply a layer of rice on top and add chilli flakes, dry basil and fried onions and chopped coriander on top of them, cover well and cook on high flame for the first 3 to 4 minutes.
After that slow down the flame and cook till steam comes.
