Today, I would like to share my Japanese Vegetable Curry. Simple and healthy recipe that makes a healthy meal. I added apple which make it better and add little excitement on this recipe.

Ingredients:
- 25 grams lotus root
- 15 grams bell pepper ( cut )
- 1 squash
- 1 apple
- 1 onion
- 2 carrots
- 2 eggplant
- 4 potatoes
- 6 okra
- 2 tablespoon cooking oil
- 500 ml water
- 1 pack Golden Curry ( 150 grams )
Procedures:

1.Prepare all the vegetables. Wash and cut according to your choice.

2.Heat oil in a pot and saute the onions and bell pepper for 1 minute. Add the eggplant and okra and stir fry for 2 minutes. Put in a bowl and set aside.

3.Stir fry the potatoes and squash for 2 minutes then add the carrots , apple, and lotus root. Cook for another 1 minute.

4.Add water and the curry cubes and let it boil.

5.Stir the vegetables and the curry cubes until the cubes completely dissolved.

6.Add the set aside vegetables. Mix and cook for 1 minute and done.

I just made my delicious and creative vegan recipe. This is my first time doing the this recipe with apples. It adds a little sweetness flavour and it compliments very well. Japanese curry usually topped in rice. This is absolutely better than in restaurants. Please try my Japanese Vegetable Curry.
