Today is Sunday and Sundays are always spent for quality time with the family. It is usually spent over good food, communing at the table during lunch and dinner while having wholesome conversation with the family. Sunday mornings usually start slow and as always starts with a cup of good coffee to welcome the new day. Afterwards, a special dish is prepared for lunch, something that is not usually prepared during the weekdays, I guess this is just family tradition while some opt to eat out or order something so they rest and relax all throughout the day. Today's Sunday special is a dish called Chicken Halang-Halang. Halang-halang means spicy in Visayan (Filipino Vernacular). This dish is characterised by the addition of sliced green chili, ginger, and coconut cream. Those three are the major ingredients that flavor the chicken halang-halang. If you like spicy food, try this authentic Filipino recipe to spice it up.
Here Are The Ingredients For Making Chicken Halang Halang:
1 kilo Whole Chicken cut into small pieces
1/2 cup Coconut Milk (Gata)
1 cup or 80grams Chayote (peeled and cubed)
2 tablespoons Green Chili
1 thumb Ginger (julienne)
1 medium White Onion (diced)
1 teaspoon Minced Garlic
8-10 Lemongrass blades
1/4 teaspoon Ground Black Pepper
1/4 teaspoon Curry Powder
2 teaspoons Kosher Salt
1/2 teaspoon Aji Ginisa Mix Seasoning
1/2 tablespoon Datu Puti Soy Sauce
1 tablespoon Silver Swan Vinegar
3 tablespoons Cooking Oil
Directions:
Start by heating the oil in a cooking pot over low-medium heat. Once it's nice and hot, you are now ready to saute the garlic, onions, and ginger. Cook them nice and slowly until they become aromatic.
After the onions start to become translucent, slowly add your chicken pieces. Season with 1/4 teaspoon of curry powder, 1/2 tablespoon Aji Ginisa Mix Seasoning, 1/2 tablespoon Datu Puti Soy Sauce, 1 tablespoon of Silver Swan VInegar, 1/4 teaspoon Ground Black pepper, and 2 teaspoons of Salt. Stir and cook for 10 minutes in low heat,making sure the bottom doesn't burn.
After 10 minutes, pour in 1/2 cup of coconut milk, then add your bundled lemongrass, chopped chili, and 1 cup chayote. Deglaze your pot and get all the flavors from the bottom. Then simmer for another 15 minutes uncovered.
After 15 minutes, you are now ready to transfer the Chicken Halang Halang into a serving plate or bowl. You may add more sliced green chillies for garnish.
