Kabuli pulao
Ingredients
Ingredients | Quantity |

Rice | 4 cups |
Mutton | Half kg |
Pualo mix spices | 2 packets |
Onions | 4 medium size |
Carrots | 5 medium size |
Green chillies | 4 to 5 |
Whole mix spices | 2 table spoon |
Tomatoes | 3 medium size |
Yogurt | 4 table spoon |
Almonds | 5 to 6 |
Garlic | 5 cloves |
Ginger | 1 inch piece |
Raisins | 1 small packet |
Salt | as per taste |
Oil | 2 cups |
Suger | two Table spoon |

Racipe
First step
Make the mutton stock
I took half kg mutton and wash it very finely the i took a pot add mutton and 5 cup of water then add whole spices mix and garlic and Ginger on it and put it on flame.
When you make stock of mutton (yakhni) when it boiled it's become foamy so just remove the all foam and left for 4 hours till mutton become soft.
2nd step
I took 4 cup of rice and wash finely and then soaked into water for 45 minutes.
In second step I take big pot and then pour 2 cup oil and add sliced onions on it fry till it becomes soft and brown and half of this I took out for garnishing.
Then add mutton when it's cooked well and fry for 5 minutes on high flame.
Then I took 4 table spoon of of yogurt and add pulao spices mix on it and mix well and add in mutton.
Mix well and fry on high flame .then I added mutton stock (yakhni ) which we made for 4 hours and left for just 10 minutes.
After 10 minutes I added Rice which was soaked on water for 45 minutes.
When one boiled came I put lid on it and left for 20 minutes on low flame it's called(dum)
When rice cooked perfectly I just off the flame Gone to the last step which is the main part of Kabuli plao.
last step
I took 5 medium size carrots and cut into thin slices.
Then I took a pan and pour some oil add two table spoon of Suger and add carrots and raisins
And it's all done then finely I dish out the rice on platter and garnishing with fry onions and carrots and raisins.

Most of the people eat Kabuli pulao with kabab but and raita but trust me it has its own taset combination of sweet and spicy.
