Bitter gourd curry With Small Onions

Hi all, Today I come up with another recipe using Bitter gourd.

I think most of them don't like this vegetable due to its bitterness. But if you follow my recipe, you become a big fan of it.

Taking bitter gourd at least once a week or once a month is recommended because of its Nutrition Values.

Today I prepared this dish using small onions and sesame seeds. Both combinations help to reduce bitterness and give a very rich taste to the dish.

Ingredients

  • Bitter gourd: 500 grams

  • Small onions: 100 grams

  • Tomato: 1

  • Tamarind pulp: 10 grams

  • Dhaniya powder: 1 tablespoon

  • Chilli powder: 2 tablespoon

  • Sesame Seeds : 3 Tablespoon

  • Jaggery: 1 tablespoon

  • Salt: As required

  • Turmeric Powder:1/4 Tea Spoon

  • Oil: 100 grams

  • Mustered Seeds: 1 Tea Spoon

  • Curry leaves: 6 number

Preparation

  • First chop Bitter gourd into a slices. If it's having hard seeds remove them, otherwise prepare a dish along with it.

  • Now soak those on add salt, leave it up for 30 minutes to 1 hour. It helps to reduce its bitterness.

  • In the meantime, heat a pan, then add sesame seeds to it. Dry fry until we get good fragrance in low flame.

  • Now transfer those into a plate, after cool down makes a fine powder. Then keep aside.

  • Now again heat a pan on adding oil. For this dish, we add a little more oil, because it gives some rich taste to the dish.

  • Now add Mustard seeds, curry leaves one by one.

  • Now add sliced bitter gourd on pressing those with hands. It releases water, those thrown away. But in general, we can drink those, it's very healthy.

  • Now on closing lid fry those until they cook into half smooth.

  • In this stage add turmeric powder and small onions to it. Now mix well. Again closing the lid, cook another 5 to 7 minutes. In the middle mix those well. And keep flame in medium.

  • Now add sliced tomatoes to it. Mix well.

  • Now add Tamarind pulp, Dhaniya powder, chilli powder, need salt along with required water. Now again cook another 5 more minutes.

  • Finally, add sesame powder to it, mix well. Now cook another 1 or 2 minutes. Along with Jangeery.

  • Now check its taste, if any needed add, them adjust curry consistency on adding water.

Now it's ready to serve.

It is a good combination with Hot Rice and Ghee.
