Hi all, Once again I come with another simple and South India popular dish using coconut, Coconut Rice.

Coconut Rice is simple and flavourful rice made of freshly grated coconut, tempering spices, curry leaves and cashew nuts.

Mainly this dish we prepare due to any occasion or for lunch box needs. But in my home, we prepare when we wish. Coconut rice with Brinjal spicy curry to great combination.

Very simple to prepare. Within 10 minutes, we prepare this dish if we have boiled rice in our hands. One more important ingredient hing must use. It enhances its taste and helps to digest.

Tamilians called this dish Thengai Sadam and kabbari annam.

In general, we prepare this dish in two ways. One is just adding tempering, spices, and grated fresh coconut with combining pre-cooked rice. It is very easy and most popular.

Another one is to cook rice with coconut milk by adding other spices. This one needs some skills in cooking. Also, time taking.

In my today post, I gave coconut recipes in the first method.


Ingredients


  • Boiled Rice: 1 cup

  • Grated Fresh Coconut: 1 cup

  • Oil : 3 tablespoon

  • ghee : 2 tablespoon

  • Salt : As required

  • Green chillies: 2

  • Red Chilli: 1

  • mustard Seeds: 1/2 teaspoon

  • Cumin Seeds: 1/2 teaspoon

  • Chana dal: 1/2 tablespoon

  • Urad dal: 1/2 tablespoon

  • cashew nuts : 10 to 12

  • curry leaves: 10

  • pinch of hing.


Preparation


  • For this first prepare boiled cooled rice

  • Now heat a pan adding oil & ghee. Then add all ingredients like mustard seeds, chana dal, and urad dal one by one. Fry all those turns to golden. Now add red chilli and green chilli along with curry leaves & cashews.

Fry all those all turn into golden colour.

  • Now add freshly grated coconut, just mix and keep 1 minute on a flame. If you using frozen coconut then fry up for another 3 to 4 minutes then only we get a good taste.

Fresh Grated Coconut

If you using fresh coconut no need to fry more, just warm heat is enough.

  • Now add cold rice along with the required salt. Mix well.

  • Now yummy coconut rice is ready to enjoy.

  • Mostly I enjoy coconut rice with any curry or mango pickle. But kids enjoy it alone.

For this dish need, we may use basmati rice or regular rice. If you use basmati rice then it gives us an amazing taste to us due to its special fragrance it enhances coconut taste. Try once all.
