Hello! Today I will tell you how to make homemade cottage cheese. For this we need homemade cow's milk. Milk that you buy in the supermarket is not suitable because it is pasteurized.
So, right after we've milked the cow, we need to strain the milk from any powder or other foreign objects that might have gotten into it.
After that, we leave the milk in a glass jar for 2-3 days so that the milk sours. Just don't put the milk in the refrigerator, otherwise it will sour much longer.
When the milk starts to sour, we need to collect the top layer. This is sour cream. We pour the remaining sour milk into a saucepan and heat it over low heat until curd lumps form. We should get the following:
Strain the resulting mass through cheesecloth. The cheese we want to get remains in the cheesecloth. However, it is still too wet right now. Therefore, we twist the gauze into a ball:
Now we put this ball under a press in order to remove excess liquid. Personally, I use a large stone as a press, such that I can lift it. The cheese can be under the press until you like its consistency. Someone likes very dry cheese, someone moist. It all depends on you.
After you have decided that the cheese is ready, you can take it out from under the press and unfold the cheesecloth. The result should look like this:
