My food-day started early and with black coffee, hot and no sugar, as usual.
I did not travel to work today, as all my appointments were scheduled for tomorrow, Saturday. So I felt a quasi-sunday inspiration and prepared mocaccinos to accompany our simple breakfast of arepas with cheese.
I like my mocaccino creamy and frothy, so first I whisk the coffee with the milk and a pinch of salt. When I get the foam up to where I like it, just until then, I add the cocoa powder and a little sugar.
Our breakfast:
After breakfast, I immediately marinated the chicken I would bake for lunch.
I only used crushed garlic, oregano, salt and olive oil. I let it bake for 80 minutes at 250 degrees F. The result was delicious, tender chicken thighs and breast in a flavorful broth that marinated perfectly with the white rice I served.
...And made some homemade garlic mayonnaise for the salad.
I also like this one creamy, so I use enough corn and olive oil:
- 125 (corn oil and olive oil)
- 2 tablespoons white vinegar
- The juice of half a lemon
- 1 whole egg (L) + 1 egg yolk
- 1/2 teaspoon salt
- 1 tablespoon prepared mustard
As I've said in several posts, to make this mayonnaise, you just need to sink the immersion blender to the bottom and once there, turn it on. You must beat without moving the blender, until the mixture becomes whitish and creamy. Then you can make slow up and down movements, so that everything is well mixed. Finally, you add garlic cloves to taste.
Then I made the salad.
I prepared a Russian salad with boiled potatoes, carrots and beets. I dressed it with the mayonnaise I prepared and toasted sliced almonds on top.
I served lunch in the living room, and we watched movies.
This dish reminds me of my mother's cooking.
A couple of hours later, we ate my citrus cake as dessert/dinner.
And coffee.
