Today was a work day for me, like every Saturday. I had an early breakfast and a quick coffee, and I was lucky enough to have lunch at the table because I finished working before sunset. The only detail I should like to share with you is that I made carrot cakes for us my sister, my brother in law, and I.
My first coffee was at the speed of light, and immediately after, I was brought this arepa filled with ham and cheese.
It was not as crunchy as usual. The reason? The cheese had a lot of liquid in it and it soaked the crust. But the taste was really good anyway. I ate my breakfast and off I went!
As soon as I arrived at the office, the secretary gave me a cup of coffee. It is our custom to have a cup of coffee to start the workday. We usually have another one at noon and then have tea or an infusion in the afternoon.
I finished working at 5 p.m. and went home (my sister's home). Once there, my lunch was served, and I ate it with much pleasure; it was beef and tomato sauce with ditalini and a good amount of parmesan on top.
I didn't go back to my house in Cumaná today because I had a home appointment with my hairdresser, who lives here near my sister's. Then I ate at peace and took a nap right after it.
In the evening I made carrot "cachapas" for dinner.
To prepare carrot cachapas for 4, you only need:
- 2 eggs (L)
- 1 cup corn meal
- 2 cups grated carrot
- 2 cups milk
- 1 teaspoon baking soda
- 1 tablespoon white vinegar
- Salt and sugar to taste
- Dash of corn oil
Mix the corn meal, salt and sugar if any, and the milk.
Add the eggs.
Add the baking soda and vinegar, to make some air. In this way, the cakes will be lighter.
Then add the grated carrot and the oil, and mix well. Cook each cake in a hot greased pan.
The cachapas were soft and light, with an intense falvor of carrots. The fresh cheese was the perfect match.
And these were the highlights of my food-day.

XD Y mientras más zanahoria les pones, más ricas quedan. Esya vez usé leche de vaca, pero con leche de coco quedan espectaculares y ya sean de maíz, de zanahoria o de auyama, etc., igual sería una comida nutritiva y libre de gluten y caseína.
