I’m so delighted to be here and participate in this special food contest on my traditional delicacy. Today, I will be sharing a recipe on special okro soup from Nigeria.
Okro soup is one of the commonest and affordable soups to prepare in Nigeria and its my favorite soup too. Below are the ingredients needed and procedures for cooking okro soup.
Ingredients needed
• 200g of okro
• 2 medium size cow skin(kpomo)
• 50g dry crayfish
• 150g Smoked ice fish
• Stock fish
• Beef
• 3 cooking spoon of palm oil
• 4 seasoning cubes(maggi)
• 50g fresh pepper
• 1 small onion
• Pumpkin leaves (ugwu)
• Salt

Procedure;
Step 1
First the ingredients to be used are prepared, the beef is washed properly with salt and water to kill germs, then the beef put into a pot, add sliced onions, dry pepper, 1 seasoning cube and half liter of water and allow to boil properly until the beef is tender enough.
Step 2
While the beef is boiling, you pluck the pumpkin leaves and wash properly with a little salt ,wash for 3times under tap. Then chop or cut your leaves and okro to desirable sizes.

Step 3
After boiling the beef properly, you put the cooked beef in a bowl and beef stock in another bowl too.

Add the beef stock in a clean pot and add 2 cooking soup of palm oil and 1 spoon of blended fresh pepper allow to boil for 2mins
Step 5
Then add smoked ice fish, dry stock fish, cow skin(kpomo) and beef,stir carefully with cooking spatula and allow to boil for 5mins.
Step 6
You now add your sliced okro,blended crayfish and 2 seasoning cubes with a pinch of salt into the pot and stir again, allow to boil for 2mins.
Step 7
Then add the sliced pumpkin leaves and stir carefully allow for 1min and put the pot down from the heat.
Waalaa.. okro soup is ready
You can Serve okro soup with garri or fufu and enjoy your delicious meal
Okro soup is one of the easiest and quickest soups to cook in 30mins time. It is nutritious staple food in most West Africa countries like Ghana and Nigeria. Okro soup is deliciously satisfying and nutritious, loaded with a lot of proteins, healthy fats and vitamins.
