2 large beets, peeled and grated
4 cups beef or vegetable broth
1 large onion, chopped
2 cloves garlic, minced
2 cups chopped cabbage
2 large potatoes, peeled and cubed
2 large carrots, peeled and chopped
1 cup tomato puree
1 tablespoon apple cider vinegar
1 bay leaf
1 teaspoon dried dill
1 teaspoon salt
1/4 teaspoon black pepper
Sour cream and fresh dill, for garnish
Instructions:

In a large pot, heat up the beef or vegetable broth until it's boiling.
Add the grated beets and chopped onion to the pot and stir to combine.
Reduce heat to medium and let the mixture simmer for 10 minutes.
Add minced garlic, chopped cabbage, cubed potatoes, and chopped carrots to the pot.
Pour in the tomato puree and add the bay leaf, dried dill, salt, and black pepper.
Stir to combine and bring the mixture to a boil.
Once the mixture is boiling, reduce the heat to medium-low and let it simmer for 30 minutes or until the vegetables are tender.
Remove the bay leaf from the pot and stir in the apple cider vinegar.
Ladle the borscht into bowls and garnish with a dollop of sour cream and fresh dill.
