Ingredients:

1 pound Jerusalem artichokes, peeled and diced
1 onion, chopped
2 garlic cloves, minced
2 tablespoons olive oil
4 cups vegetable or chicken broth
1/2 cup heavy cream
Salt and pepper, to taste
Chopped fresh parsley, for garnish

Instructions:

In a large pot, heat the olive oil over medium heat. Add the onions and garlic and cook for about 5 minutes, or until the onions are soft and translucent.
