Ingredients:
1 lb (500g) prawns, peeled and deveined
1 can (14 oz/400ml) coconut milk
1 small onion, finely chopped
2 garlic cloves, minced
1-2 red chili peppers, finely chopped
1 tbsp (15ml) vegetable oil
1 tbsp (15ml) fish sauce
1 tsp (5ml) sugar
Salt, to taste
Fresh cilantro leaves, for garnish
Instructions:
Heat the vegetable oil in a large skillet over medium heat.
Add the onion and garlic and cook until softened, stirring occasionally.
Add the chili peppers and cook for 1-2 minutes until fragrant.
Add the prawns to the skillet and cook for 3-4 minutes, or until they are pink and opaque.
Pour in the coconut milk, fish sauce, sugar, and a pinch of salt. Stir well to combine.
Bring the mixture to a simmer and cook for another 3-4 minutes, until the sauce has thickened slightly.
Remove from the heat and let the prawns cool for a few minutes.
