Hello everyone, This is my first time posting here, I hope am welcomed. So today I will be preparing Egusi (melon) soup, Nigerian native dish.

Ingredients

  1. 2 cups of grinded Egusi (melon) seeds
  2. 1 cup of periwinkle
  3. 4 Small stock cubes
  4. Sliced Onions (optional)
  5. Salt to taste
  6. Half bottle of red palm oil
  7. Bitter leaf (olugbo)
  8. Ground crayfish (2 spoon)
  9. Pepper
  10. Meat
  11. Ogbono (optional)

Cooking methods

  • Pour your red palm oil into a dry cooking pot and allow to heat.

  • when the oil heats up very well, add your onions and egusi and start frying - stirring it as well for like 5 minutes

  • Add your meat. stir together
    Fry for like 1 minute

  • Add water (your desired quantity depending on how thick you want it to be) cover the pot allowing it to boil for about 15 minutes.

  • Add crayfish/stock cubes/salt/pepper /periwinkle and stir

  • Allow to boil for few minutes

  • Add ogbono and leave pot cover half way covered

  • Allow it to boil up

  • Add bitter leaf (Olugbo) Allow to boil before stirring it.

  • Allow to simmer.....and food is ready.
