Hello steemians, this is my first post on #steemfoods. I was invited by @alikoc07 to post my food recipe in #steemfoods and also to be part of the ongoing challenge. This is my entry to the cooking contest.
Today I will talk about one of the favorite delicacy cherished by Igbo's in Eastern Nigeria, which is also one of my favorites. We call it Ofe-Akwu but known by others as Banga Stew. This dish is served with Rice and also can be served with Eba.
Ingredients
- Palm kernel
- habanero Pepper
- Crayfish
- Onion
- Dry fish
- Beef
- Salt
- Maggi
- Pumpkin leaf
Steps
- Wash the beef, put in a pot and cook with Maggi, salt, onion and water till it's tender. Then take it down.
- You start by boiling the palm kernel till you can peel off the skin easily, then sieve into a mortar and pound with a pestle but make sure not to pound too hard, to prevent the nut from breaking, this is to dislodge the skin off the nut. Keep pounding until you start seeing a lot of mesh around the nut.
- You can sieve into a bowl or you can continue with the mortar depending on how wide the mortar is. Pour in hot water, use your hand to dislodge as much mesh as possible and sieve into a pot.
- Using your mortar or blender, grind the habanero pepper, crayfish and onion together.
- Place the pot on heat and allow to boil for 15minutes. Into the pot, add in the beef and it's stock, grinded habanero pepper, crayfish and onion into the pot.
- After 5minutes, add in Maggi, salt and sliced onion into the pot.
Allow to boil for 5minutes, slice the pumpkin leaf and add into the pot. Take down after 2minutes.

Thank you so much for sharing a meal from Nigerian cuisine. :) This protein dish you prepare with dates and beef looks extremely creative. The meal can be made with any pepper of your choice but black pepper is not really recommended because it would darken the stew. You can also use any meat of your choice or fish. For dates, I guess you meant palm kernel, I thick you can find that in Turkey
