Pyzy z mięsem



Pyzy is a typical comfort food from Poland. It's not the healthiest choices, but sometimes we just need to take care of our moods more than counting calories and in that moments Pyzy offers us the "feel like home", hygge, like Danish would say.


In this recipe, I will present you the most common version of Pyzy, which is meat stuffed. If you are a vegetarian, you may be interested in stuffing it with some fruits instead. It's quite popular to put inside fresh strawberries in the summer. You may also experiment with less conventional stuffing and add the spinach, mushrooms or just create the smaller version of noodles without the stuffing at all.

Ingredients (5 plates):




🥔 2 kg of potatoes
🥔 1 glass of the wheat flour
🥔 1,5 glass of the potato flour
🥔 1 kg of the minced meat
🥔 2 onions
🥔 3 eggs
🥔 salt, pepper, a bit of butter
🥔 Bacon, breadcrumbs (optional)


Preparation:


1️⃣ Peel the potatoes. Make sure there are no green parts of it, as the greens on potatoes contain the substances which can cause the pain of the digestive system. If you see the green part, cut it out.
2️⃣ Wash peeled potatoes. Separate 25-50% and leave them for later. Another 50-75% cut into small pieces and boil in salted water. You could skip cutting it, but smaller pieces gets boiled faster so it will save you some time.
3️⃣ Take 25-50% of the raw potatoes you left before and grate it/smash it. Remove the water leaving only dry part of the smashed potatoes.
4️⃣ Now chop the onion into the thin cubes. Thinner cubes you are able to make, better for the meal.
5️⃣ Boil the meat in a salted water, in the meantime fry a bit the onion on the butter, olive oil or any other fat you have.
6️⃣ When your potatoes will be boiled, smash it well and leave until it will totally cool. You cannot use warm potatoes to make the noodles, so it's very crucial. In the winter, I like to put the pot on the balcony to speed the process up.
7️⃣ Mix the boiled meat with the onion, salt and pepper. Optionally you may use the egg and breadcrumbs. You can also add any species you like.
8️⃣ In another bowl mix boiled potatoes with smashed raw potatoes, two types of the flour, eggs and salt. Knee the dough. If it will be to thin, add more flour. It should have the consistency like on the photo.
9️⃣ The most difficult part of the recipe: take the piece of dough and form a small, thin pancake. If it's sticks to your hands, use some flour. Put a spoon or two of the meat filling in the middle and close the noodle. Roll it a bit and make sure it doesn't have any holes, otherwise it will loose whole meat during the boiling.


1️⃣0️⃣ Cut the bacon into small pieces. That part is optional, you may skip it but the meal with the bacon tastes much better. I do like to choose the bacon with plenty of fat, but it's up to your personal taste what will you choose.
1️⃣1️⃣ Melt all the fat from the bacon on very low fire and use it as the topping on the noodles.

Put the noodles into the salted, boiling water and boil it for 6 minutes. Serve with the bacon.
