Hi Foodies,
As you have seen in my previous post, I received a vegetable box last week and this is what I meal prepped, so it is faster for me to eat healthy meals, and cuts out the daily cooking.
Roast Aubergine
The first thing I made was roast Aubergine and I ended up eating it with pasta.
I only like Aubergine when it is cooked though really well so I make it first because once it is in the pan you can do everything else.
Ingredients:
- Aubergine
- Garlic
- Chilli
- Olive oil
Roast Fennel
The next thing I made was oven roast fennel.
I really like fennel raw but I wasn't sure if I was gonna eat it raw this week. Normally in the summer I eat a lot more raw vegetables and salads, but when it is cold I like to stick to cooked food.
Ingredients:
- Fennel
- Thyme
- Olive oil
Tofu Scramble
I always use smoked tofu for scramble because it is more flavourful. It is really easy and quick to make and tastes really good.
Ingredients:
- Tofu
- nutritional yeast
- chilli flakes
- garlic granules
- soy sauce
